Get Ready: Preheat your oven to a warm 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
Prep Sweet Potato: Cook a large sweet potato until very soft (about 6 minutes in the microwave). Measure out one cup and mash it well with a fork until it's super smooth. Set aside.
Mix Dry Ingredients: In a food processor, combine the flour, baking powder, sugar, and salt. Pulse it a few times to mix everything evenly.
Add Butter: Add the cold butter cubes to the food processor. Pulse 3-4 times until the butter pieces are about the size of peas. This helps create flaky biscuits!
Combine & Form Dough: Transfer the flour-butter mixture and the mashed sweet potato to a large bowl. Add just one tablespoon of buttermilk and gently stir until it starts to come together. If the dough seems too dry, add the second tablespoon of buttermilk, mixing just enough to form a soft dough.
Lightly Flour Surface: Lightly sprinkle some flour on your clean work surface and rolling pin. Use just enough to prevent sticking, as too much flour can make your biscuits tough.
Roll & Cut: Take the dough from the bowl and knead it gently a few times until it forms a smooth ball. Roll the dough out to about ½-inch thickness. Use a 2-inch biscuit cutter (or a glass rim) to cut out rounds. Place these rounds on your prepared baking sheet. Gather any leftover dough, re-roll it, and cut out more biscuits until all dough is used.
Bake: Pop the baking sheet into your preheated oven and bake for about 12 minutes, or until the biscuits are golden brown and puffed up.
