Ingredients
  

  • 3 cups puffed rice cereal
  • 1.5 cups mini marshmallows
  • 4 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 2 cups white chocolate chips (or white candy melts)
  • 1 tbsp coconut oil (optional, for super smooth chocolate)
  • 0.5 cup festive nonpareils (red, green, and white)

Instructions
 

  • Prepare the Crispy Mix: In a large saucepan, gently melt the butter over low heat. Once it's liquid, add the mini marshmallows and stir continuously until they are completely melted and smooth. Take the pan off the heat and stir in the vanilla extract.
  • Combine & Cool: Add the puffed rice cereal to the marshmallow mixture. Fold it in carefully until every piece of cereal is coated. Let this mixture cool for 2-3 minutes; it should still be warm but comfortable to handle.
  • Shape Your Treats: Lightly grease your hands with a bit of butter or cooking spray. Roll the mixture into cute, bite-sized balls, about 1 to 1.5 inches across. If the mix seems a little crumbly, just give it a gentle squeeze to help it form. Place your shaped balls on a baking sheet lined with parchment paper and let them cool fully.
  • Melt the White Chocolate: Grab a microwave-safe bowl and melt your white chocolate chips (or candy melts) in short bursts of 20-30 seconds. Stir well after each burst until the chocolate is perfectly smooth. If it's a bit thick, stir in the optional coconut oil to make it wonderfully fluid for dipping. Let it sit for a minute or two to thicken slightly, making it easier to coat.
  • Dip & Decorate: Dip each rice crispy ball into the melted white chocolate, ensuring it's fully coated. Lift it out with a fork and gently tap off any extra chocolate. Immediately place the coated ball back on the parchment-lined tray and generously sprinkle with your festive red, green, and white nonpareils before the chocolate sets.
  • Set & Enjoy: Allow the decorated rice crispy balls to set at room temperature. For a quicker set, pop the tray into the refrigerator for 15-20 minutes. Once the chocolate is firm, your delightful holiday treats are ready to serve!
