Ingredients
  

  • 2.5 pounds boneless, skinless chicken tenderloins
  • 3/4 cup light mayonnaise
  • 3/4 cup finely shredded Parmesan cheese divided
  • 1 teaspoon garlic powder
  • 1/2 teaspoon sea salt

Instructions
 

  • Get your oven ready! Preheat it to 400°F (200°C). Prepare a large baking sheet by lining it with parchment paper or giving it a light spray with non-stick cooking spray for easy cleanup.
  • In a medium-sized bowl, whisk together the light mayonnaise, 1/4 cup of the Parmesan cheese, garlic powder, and sea salt. Add the chicken tenderloins to this mixture and toss gently until each piece is well coated. Arrange the coated chicken in a single layer on your prepared baking sheet.
  • Evenly sprinkle the remaining 1/2 cup of Parmesan cheese over the chicken tenderloins.
  • Bake for 15-25 minutes, or until the chicken is thoroughly cooked and reaches an internal temperature of 160°F (71°C) on a meat thermometer. For extra juicy results, you can remove them around 158°F (70°C) and let them rest for a few minutes.

Notes

Optional Golden Finish: For a beautiful golden-brown crust, you can broil the chicken for an extra 2-3 minutes. Keep a close eye on them during this step to prevent burning!
