Ingredients
  

Cookie Dough

  • 1 1/4 cups unsalted butter softened
  • 1 cup creamy peanut butter
  • 1 1/2 cups light brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking soda
  • 1 tsp table salt

Filling

  • 6-8 cups marshmallow fluff

Instructions
 

  • Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • In a large bowl, beat butter, peanut butter, brown sugar, and granulated sugar until creamy.
  • Add eggs and vanilla; mix until combined, scraping the bowl as needed.
  • In a separate bowl, whisk flour, baking soda, and salt.
  • Gradually add the dry mixture to the wet mixture on low speed, mixing just until combined.
  • Drop dough by 1 1/2 Tbsp scoops onto the prepared sheet, spacing 2 inches apart.
  • Bake for 10–12 minutes. Let cool on the sheet for 10 minutes, then transfer to a wire rack to cool completely.
  • To assemble: spread a heaping 1 1/2 Tbsp of marshmallow fluff on the flat side of one cookie. Top with another cookie and press gently. Repeat with remaining cookies.
