Preheat oven to 350°F. Line a baking sheet with parchment paper.
In a large bowl, beat butter, peanut butter, brown sugar, and granulated sugar until creamy.
Add eggs and vanilla; mix until combined, scraping the bowl as needed.
In a separate bowl, whisk flour, baking soda, and salt.
Gradually add the dry mixture to the wet mixture on low speed, mixing just until combined.
Drop dough by 1 1/2 Tbsp scoops onto the prepared sheet, spacing 2 inches apart.
Bake for 10–12 minutes. Let cool on the sheet for 10 minutes, then transfer to a wire rack to cool completely.
To assemble: spread a heaping 1 1/2 Tbsp of marshmallow fluff on the flat side of one cookie. Top with another cookie and press gently. Repeat with remaining cookies.
