First, get your waffle maker nice and hot by preheating it.
Toss all your ingredients – the coconut flour, eggs, softened cream cheese, melted butter (or oil), cream (or milk), sweetener, baking powder, xanthan gum (if using), and vanilla (if using) – into a blender. Blend everything together until you have a wonderfully smooth batter.
Let the batter sit for a few minutes. This is important because the coconut flour needs a little time to absorb the liquid and thicken up properly. It should be a bit thicker than regular waffle batter but still easy to spread. If it seems too thick, add a tiny bit more milk or cream, one tablespoon at a time.
Once your waffle maker is ready, scoop about a scant 1 cup of batter (roughly 128 grams) onto the hot surface. Spread it out gently and close the lid.
Cook the waffle until it's golden brown and you see that steam is no longer coming out from the sides. This usually takes about 4-5 minutes, but your waffle maker’s instructions are the best guide!
Carefully remove the cooked waffle from the iron. It can be a little delicate when hot, so be gentle!
Repeat with any remaining batter to make more delicious waffles.
For best results, let each hot waffle cool undisturbed on a plate or rack for a minute before handling. This helps it firm up and makes it easier to enjoy.
