Corn Salad

  • 1/4 cup red onion finely chopped
  • 4 cups fresh or frozen corn rinsed and drained if frozen; steamed, boiled, or grilled if fresh
  • 1 cup cherry tomatoes halved
  • 1/3 cup crumbled feta cheese
  • 1/4 cup fresh basil thinly sliced
  • 3 tablespoon extra-virgin olive oil
  • 1 lime fresh lime juice juiced
  • kosher salt to taste
  • freshly ground black pepper to taste

Instructions
 

  • Grab your largest mixing bowl – you'll need room to toss!
  • Add all the colorful ingredients: the finely chopped red onion, prepared corn, halved cherry tomatoes, crumbled feta cheese, and the thinly sliced fresh basil.
  • Drizzle the extra-virgin olive oil and the refreshing lime juice over everything in the bowl.
  • Season generously with a pinch of kosher salt and a dash of freshly ground black pepper.
  • Gently toss everything together with a large spoon or tongs until all the ingredients are beautifully combined and coated with the dressing.
  • Give it a quick taste! Feel free to add more salt, pepper, or lime juice if you like – make it perfect for your palate.
