French Toast Roll Ups

Ingredients
  

  • 10-12 slices Orowheat Country Buttermilk white bread
  • 1 1/2 cups fresh strawberries, diced
  • 2 large eggs, whisked
  • 2 tablespoons milk
  • 1 tablespoon cinnamon plus 1/4 teaspoon
  • 1/4 cup granulated sugar plus 1 teaspoon
  • 8 oz. softened cream cheese
  • Butter as needed for the pan

Instructions
 

  • Trim the crusts from the bread and flatten each slice with a rolling pin.
  • Combine diced strawberries with 1 teaspoon of sugar and set aside.
  • In a shallow dish, whisk together the eggs, 1/4 teaspoon of cinnamon, and milk until smooth.
  • In another shallow dish, mix 1/4 cup of sugar with 1 tablespoon of cinnamon.
  • Spread cream cheese on a slice of bread, add 1-2 teaspoons of strawberries at one end, and roll tightly. Repeat with the remaining slices.
  • Dip each roll in the egg mixture, ensuring they are well-coated.
  • Heat about 1 teaspoon of butter in a skillet over medium heat and place the rolls seam side down. Cook until golden brown on all sides, about 2 minutes per side, adding more butter as needed.
  • Once cooked, roll in the cinnamon sugar mixture.
