French Toast Rolls-Ups

Ingredients
  

  • 8 slices Texas toast
  • 4 ounces cream cheese softened
  • 8 ounces strawberries diced
  • 2 large eggs
  • 1 tablespoon milk
  • 1 tsp pure vanilla extract
  • 3 tbsp salted butter
  • 1/3 cup granulated cane sugar
  • 1/2 tsp ground cinnamon
  • powdered sugar optional

Instructions
 

  • Flatten each slice of bread using a rolling pin and cut off the crusts.
  • Spread ½ tablespoon of cream cheese on each slice.
  • Place 1 rounded teaspoon of diced strawberries on the cream cheese, avoiding overfilling.
  • Carefully roll up the bread.
  • In a bowl, whisk together the eggs, milk, and vanilla. Set aside.
  • In another bowl, mix the sugar and cinnamon. Set aside.
  • Dip the prepared rolls in the egg mixture, ensuring they don’t get too soggy.
  • Heat butter in a pan over medium heat.
  • Place the rolls seam side down in the pan and cook until golden brown, about 2 minutes per side, using tongs to flip.
  • Once cooked, roll the French toast in the sugar mixture until coated.
  • Serve warm with a sprinkle of powdered sugar.
