French Toast Rollups

Deliciously sweet and creamy, these rollups are irresistible!

Ingredients
  

  • 7 large eggs
  • 1/4 cup sugar
  • 1 tsp cinnamon
  • 12 slices soft bread
  • chocolate spread or your sweet spread of choice
  • avocado oil or any neutral oil

Instructions
 

  • In a large bowl, crack the eggs and whisk them well with a fork.
  • In a separate small bowl, mix the sugar and cinnamon together.
  • Take a slice of bread and flatten it using a rolling pin, then repeat for all slices.
  • Cut off the crusts and set them aside.
  • Spread about 1 teaspoon of chocolate spread on each flattened slice, then roll them up tightly.
  • Heat a nonstick pan over medium-high heat and add a thin layer of oil.
  • Once hot, dip each roll in the egg mixture, shake off excess, and place in the pan.
  • Cook for 1 to 3 minutes on each side until golden brown.
  • Optionally, dip the crusts in the egg and fry them too.
  • Serve the roll-ups and crusts dusted with cinnamon-sugar.
