In a large bowl, crack the eggs and whisk them well with a fork.
In a separate small bowl, mix the sugar and cinnamon together.
Take a slice of bread and flatten it using a rolling pin, then repeat for all slices.
Cut off the crusts and set them aside.
Spread about 1 teaspoon of chocolate spread on each flattened slice, then roll them up tightly.
Heat a nonstick pan over medium-high heat and add a thin layer of oil.
Once hot, dip each roll in the egg mixture, shake off excess, and place in the pan.
Cook for 1 to 3 minutes on each side until golden brown.
Optionally, dip the crusts in the egg and fry them too.
Serve the roll-ups and crusts dusted with cinnamon-sugar.
