Fried Cabbage and Sausage Skillet

Ingredients
  

  • 14 ounces smoked sausage sliced
  • 1 medium head green cabbage shredded
  • 1/2 cup yellow onion diced
  • 4 cloves garlic minced
  • 2 tablespoons butter
  • 2 tablespoons bacon grease divided
  • 2 tablespoons smoked paprika
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • red pepper flakes optional

Instructions
 

  • Warm a large skillet or pan over medium heat. Add half of the bacon grease.
  • Cook the sliced sausage for a few minutes until lightly browned. Remove the sausage and set it aside.
  • In the same pan (no need to clean it!), add the remaining bacon grease, diced onion, salt, and pepper. Sauté the onions until they soften and begin to turn golden, about 3-5 minutes. This natural caramelization adds a lovely sweetness.
  • Stir in the minced garlic and cook for just about 20 seconds until fragrant. Be careful not to let it brown, as it can turn bitter.
  • Melt in the butter and stir in the smoked paprika, letting it cook for about a minute to bring out its full flavor. Then, pour in the apple cider vinegar.
  • Add the shredded cabbage to the skillet. Toss everything together well and sauté for 10-12 minutes, or until the cabbage is tender-crisp.
  • Return the cooked sausage to the pan. If you like a little kick, add the optional red pepper flakes. Cook for another 2-3 minutes, just until the sausage is heated through. Serve this delicious one-pan meal warm!
