Ingredients
  

  • 1 pound ground chicken
  • ½ cup grated Parmesan cheese the powdered kind
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 cloves garlic minced, for meatballs
  • ½ cup fresh parsley finely chopped
  • 2 tablespoons olive oil
  • 6 tablespoons unsalted butter
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic grated, for the sauce

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  • In a large bowl, gently combine the ground chicken, Parmesan cheese, salt, pepper, minced garlic, chopped parsley, and olive oil. Use a fork or your hands to mix just until combined, without overworking the meat.
  • Scoop the mixture into 12 equal portions (a small cookie scoop works perfectly!) and roll each into a neat ball. Arrange them evenly on your prepared baking sheet. Bake for about 20 minutes until they're cooked through and lightly golden.
  • While the meatballs are baking, melt the butter in a small saucepan over medium-low heat. Be careful not to let it boil or simmer.
  • Remove the saucepan from the heat and stir in the grated garlic and fresh lemon juice. Give it a taste and add a pinch of salt and pepper if you like.
  • Once the meatballs are out of the oven, spoon that delicious garlic butter sauce generously over them. Serve hot and savor your healthy, flavorful meal!
