These spooky, healthy Ghost Truffles are the perfect Paleo-friendly treat for Halloween! Made with coconut butter and pecans, they are as delicious as they are adorable.
3tbspcacao pasteor 100% dark unsweetened chocolate, chopped
1/2cupcoconut buttermelted
2tbspraw honey or maple syrup
1/2tspvanilla extract
1pinchfine sea salt
1/2cupunsweetened shredded coconut
2tbspdairy-free mini chocolate chips
Instructions
Gently melt the cacao paste in a small bowl over simmering water (double boiler style).
Stir in the chopped pecans, 4 tablespoons of melted coconut butter (save the rest for dipping), honey, vanilla, and salt until everything is well mixed.
Scoop a heaping tablespoon of the mixture onto a parchment-lined baking sheet. Use your hands to gently roll each portion into a 1-inch ball (the dough may be a little crumbly, so handle it lightly).
Press a lollipop stick into the center of each truffle, then pop the tray into the freezer for 20 minutes to firm up.
One at a time, dip the chilled truffles into the remaining melted coconut butter, then roll them in the shredded coconut. Return them to the parchment sheet.
Press three chocolate chips into each truffle to make a cute little ghost face.
Keep refrigerated — the coconut butter melts at room temperature above 72°F.
