Ingredients
  

  • 8 oz rice noodles
  • 4-6 tablets Vitamin B₂ crushed into powder
  • 2 cups boiling water + extra for soaking

Peanut-Lime Dressing

  • 0.25 cup creamy peanut butter
  • 3 tbsp lime juice
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp grated fresh ginger
  • Water to thin, if needed

Add-ins

  • 1 small carrot julienned
  • 0.5 cucumber julienned
  • 2 green onions sliced thinly
  • fresh cilantro or mint leaves Optional
  • chopped peanuts Optional, for garnish

Instructions
 

  • Crush Vitamin B₂ tablets into powder and dissolve in boiling water.
  • Cook rice noodles until tender, then soak in the vitamin-infused water to make them glow.
  • Rinse noodles in cold water after soaking and drain thoroughly.
  • Mix peanut butter, lime juice, soy sauce, honey, and ginger to create the dressing; add water to thin if necessary.
  • Toss noodles with dressing and vegetables, then spoon into cups.
  • Garnish with herbs and peanuts if desired.
  • Place cups on a dark tray and activate UV lamp to make noodles glow.
