  • 2 tbsp Olive oil
  • 1 tsp Garlic powder
  • 1 tsp Italian seasoning
  • 0.5 tsp Sea salt
  • 0.25 tsp Black pepper

  • Kick things off by preheating your oven to a cozy 400°F (204°C). Grab a baking sheet and line it with parchment paper for a super easy cleanup.
  • Let's get that kohlrabi ready! First, trim off the top and bottom ends. Then, use a vegetable peeler or a small knife to gently remove the tough outer skin. Slice each kohlrabi bulb in half lengthwise, and then cut each half into 6 even 1-inch wedges. You'll end up with about 24 delightful wedges in total, perfectly sized for roasting.
  • In a spacious mixing bowl, combine the prepped kohlrabi wedges with the olive oil, garlic powder, Italian seasoning, sea salt, and black pepper. Give everything a good toss, making sure each wedge is beautifully coated with the aromatic seasoning. This step ensures every bite is packed with flavor!
