Instructions
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
In a mixing bowl, combine Greek yogurt, egg, honey, melted coconut oil, and vanilla until smooth.
In a separate bowl, whisk together baking soda, salt, and flour.
Gradually add dry ingredients to wet, mixing until just combined. Fold in chocolate chips.
Drop spoonfuls of dough onto prepared baking sheets, spacing evenly.
Bake for 10-12 minutes until edges are golden. Let cookies cool slightly before transferring to a wire rack.
Notes
Feel free to substitute honey with maple syrup or adjust ingredients for preferred sweetness. Enjoy your healthy cookies!
