Ingredients
  

  • 1 1/4 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 cup plain unsweetened whole milk Greek yogurt
  • 1/2 cup whole milk
  • 3 tablespoons unsalted butter melted and slightly cooled
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions
 

  • In a mixing bowl, gently whisk together your dry ingredients: the flour, baking powder, and salt. Set aside.
  • In a separate, larger bowl, whisk together the sugar, Greek yogurt, milk, melted butter, eggs, and vanilla extract until well combined and smooth.
  • Carefully add the dry flour mixture to the wet yogurt mixture. Mix with a rubber spatula just until everything is combined and there are no dry spots. Be careful not to overmix!
  • Lightly grease a mini muffin tin with cooking spray. Spoon about 1 tablespoon of batter into each muffin cup, filling them roughly halfway.
  • Feel free to add your favorite healthy toppings now! Try 2-3 fresh blueberries or a tiny sprinkle of mini chocolate chips on top of each muffin for an extra treat.
  • Bake your mini muffins in a preheated oven at 400 degrees Fahrenheit for 9-11 minutes, or until a toothpick inserted into the center comes out clean. Let them cool slightly and enjoy!
