Instructions
Preheat your oven to 350°F. Prepare a muffin tin with non-stick spray or silicone liners.
Blend 1 cup of oats until fine to make oat flour. Set aside.
In a large bowl, mix the remaining 2 cups of oats, the prepared oat flour, baking powder, baking soda, salt, and cinnamon.
In a separate bowl, whisk together the oil, eggs, Greek yogurt, vanilla extract, and protein powder until well combined.
Pour the wet mixture into the dry ingredients and mix until just smooth. Be careful not to overmix.
Gently fold in the mini chocolate chips.
Distribute the batter evenly into the prepared muffin cups, filling almost to the top.
Bake for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool briefly in the tin before transferring them to a wire rack to cool completely.
