Ingredients
  

Dry Ingredients

  • 3 cups oats (quick or rolled)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup vanilla protein powder
  • 1 teaspoon cinnamon

Wet Ingredients

  • 1/4 cup oil
  • 1 cup plain 0% Greek yogurt
  • 2 eggs
  • 1 teaspoon vanilla extract

Add-ins

  • 2/3 cup mini chocolate chips

Instructions
 

  • Preheat your oven to 350°F. Prepare a muffin tin with non-stick spray or silicone liners.
  • Blend 1 cup of oats until fine to make oat flour. Set aside.
  • In a large bowl, mix the remaining 2 cups of oats, the prepared oat flour, baking powder, baking soda, salt, and cinnamon.
  • In a separate bowl, whisk together the oil, eggs, Greek yogurt, vanilla extract, and protein powder until well combined.
  • Pour the wet mixture into the dry ingredients and mix until just smooth. Be careful not to overmix.
  • Gently fold in the mini chocolate chips.
  • Distribute the batter evenly into the prepared muffin cups, filling almost to the top.
  • Bake for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Let the muffins cool briefly in the tin before transferring them to a wire rack to cool completely.
