Grilled Honey-Balsamic Glazed Fruit

- 0.5 cup balsamic vinegar
- 0.5 cup honey
- 1 dash salt
- 6 medium peaches or nectarines halved and pitted
- vanilla ice cream optional
In a small saucepan, stir together the vinegar, honey, and salt. Cook over low heat, stirring, until smooth and blended (about 2–3 minutes). Set aside ⅓ cup of this mixture to use for brushing the fruit.
Bring the remaining mixture to a boil over medium heat. Cook and stir until it thickens slightly (about 4–6 minutes). Don’t overcook. Remove from heat and set aside as your glaze.
Brush the cut sides of the peaches with the reserved balsamic mixture. Place them cut-side down on a greased grill rack over medium heat. Grill, covered, for 6–8 minutes per side, brushing occasionally with more reserved mixture, until caramelized and tender. Serve warm with the thickened glaze and, if you like, a scoop of vanilla ice cream.
