Ingredients
  

  • 1 tbsp olive oil
  • 1 small yellow onion diced
  • 1 lb lean ground beef
  • 1 tsp Italian seasoning
  • 1/2 tsp sweet paprika
  • salt to taste
  • black pepper to taste
  • 6 oz fresh baby spinach
  • 10 oz frozen cauliflower rice cooked
  • 1 cup sour cream or plain yogurt
  • 1 tbsp butter room temperature
  • 1/2 tsp dried basil
  • 2-3 tbsp milk if needed
  • 8 oz shredded Italian blend cheese

Instructions
 

  • Preheat your oven to 375°F.
  • In a large skillet, heat olive oil over medium-high heat. Sauté onions for 2 minutes, then add garlic and cook for 20 seconds.
  • Incorporate ground beef, seasoning it with Italian seasoning, paprika, salt, and pepper. Cook until the beef is browned, breaking it up as it cooks.
  • Stir in spinach, cooking until wilted, then remove from heat and drain excess liquid.
  • In a 9x13-inch baking dish, mix cooked cauliflower rice, sour cream, butter, and dried basil until creamy, adding milk if necessary.
  • Combine the beef mixture with the cauliflower rice mixture and top with shredded cheese.
  • Bake for 22 to 25 minutes until bubbly and cheese is melted. Let it rest for 7 to 10 minutes before serving.
