Equipment

  • Large skillet
  • 9x13 Baking Dish
  • Pastry Cutter
  • Biscuit Cutter

Ingredients

Prepare the Filling

  • 1 tablespoon Extra Virgin Olive Oil
  • 1.5 pounds Lean Ground Beef (85/15)
  • 1 small Yellow Onion diced
  • 2 cloves Garlic minced
  • 1 cup Carrots peeled and diced
  • 1 cup Potatoes peeled and diced
  • 2 tablespoons Tomato Paste
  • 1 tablespoon Worcestershire Sauce
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Fine Sea Salt
  • 0.5 teaspoon Freshly Ground Black Pepper
  • 2 tablespoons All-Purpose Flour
  • 2 cups Low Sodium Beef Broth
  • 1 cup Frozen Peas

Craft the Biscuit Topping

  • 2 cups All-Purpose Flour
  • 1 tablespoon Baking Powder
  • 0.5 teaspoon Baking Soda
  • 6 tablespoons Cold Salted Butter
  • 0.75 cup Buttermilk
  • 0.5 cup Shredded Cheddar Cheese

Instructions

  • Preheat your oven to 400°F (200°C). Lightly grease a 9x13 baking dish and set it aside.
  • In a large skillet, heat the olive oil over medium heat. Add the lean ground beef and cook until it's nicely browned, then drain off any excess fat for a healthier base.
  • Stir in the diced onion and minced garlic, cooking for about 2 minutes until they become fragrant.
  • Add the diced carrots and potatoes, cooking for another 3 minutes while stirring. You'll notice some lovely caramelization starting, which adds natural sweetness and depth.
  • Mix in the tomato paste, Worcestershire sauce, dried thyme, salt, and pepper, ensuring everything is well combined.
  • Sprinkle the flour over the mixture and stir well to coat. Slowly pour in the beef broth, stirring continuously. Let it simmer gently for about 5 minutes until the sauce thickens nicely.
  • Finally, stir in the frozen peas and remove the skillet from the heat.
  • Transfer this flavorful filling into your prepared baking dish and set it aside.
  • In a medium bowl, whisk together the flour, baking powder, and baking soda.
  • Using a pastry cutter or your fingertips, carefully work the cold butter into the flour mixture until it resembles coarse crumbs or small flakes. Be sure not to overmix!
  • Pour in the buttermilk and stir gently just until the dough comes together. Again, avoid overmixing to ensure your biscuits stay tender and flaky.
  • Lightly pat the biscuit dough into a ball and roll it out to your desired thickness. Use a floured biscuit cutter to cut out 6 to 8 biscuits, then arrange them over the beef filling, leaving small gaps for steam to escape.
  • Sprinkle the shredded cheddar cheese evenly over the tops of the biscuits.
  • Bake in the preheated oven for 25 to 30 minutes, or until the biscuits are beautifully golden brown and fully cooked through.
  • Let the pot pie cool for 5 to 10 minutes before serving. This allows the flavors to meld and the filling to set slightly. Dive into this comforting, wholesome meal!
