In a spacious mixing bowl, combine the almond butter, maple syrup, vanilla protein powder, vanilla extract, rolled oats, salt, and cinnamon. Stir everything together with a rubber spatula until you get a thick, consistent batter.
Line a baking sheet with wax paper. Using a mini cookie scoop (about 1.5 tablespoons), drop portions of the batter onto the prepared sheet. Gently roll each portion with your hands to shape them into smooth, round energy bites.
In a microwave-safe bowl, add the white chocolate chips and coconut oil. Microwave in short bursts of 10-15 seconds, stirring well after each interval, until the chocolate is fully melted and smooth. Be careful not to overheat it!
Drizzle the melted white chocolate over the tops of your energy bites.
Pop the baking sheet with the energy bites into the refrigerator for at least 1 hour, or until they are firm and set.
Once hardened, transfer your delicious energy bites to an airtight container. Store them in the refrigerator for up to a week, or in the freezer for up to 2-3 months for a longer-lasting treat.
