Healthy Cinnamon Roll Energy Bites

Ingredients
  

  • 1 cup natural creamy almond butter
  • 1/3 cup pure maple syrup
  • 1/2 cup vanilla protein powder
  • 2 teaspoons vanilla extract
  • 1/2 cup rolled oats
  • 1 teaspoon salt (reduce to ΒΌ teaspoon if your almond butter is already salted)
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 cup white chocolate chips
  • 1 teaspoon coconut oil

Instructions
 

  • In a spacious mixing bowl, combine the almond butter, maple syrup, vanilla protein powder, vanilla extract, rolled oats, salt, and cinnamon. Stir everything together with a rubber spatula until you get a thick, consistent batter.
  • Line a baking sheet with wax paper. Using a mini cookie scoop (about 1.5 tablespoons), drop portions of the batter onto the prepared sheet. Gently roll each portion with your hands to shape them into smooth, round energy bites.
  • In a microwave-safe bowl, add the white chocolate chips and coconut oil. Microwave in short bursts of 10-15 seconds, stirring well after each interval, until the chocolate is fully melted and smooth. Be careful not to overheat it!
  • Drizzle the melted white chocolate over the tops of your energy bites.
  • Pop the baking sheet with the energy bites into the refrigerator for at least 1 hour, or until they are firm and set.
  • Once hardened, transfer your delicious energy bites to an airtight container. Store them in the refrigerator for up to a week, or in the freezer for up to 2-3 months for a longer-lasting treat.
