Ingredients
  

  • 1 cup shredded Mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup blanched almond flour
  • 2 large eggs
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 3/4 teaspoon sea salt (or 1/2 teaspoon for less salt)
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil divided (plus more if needed for frying)
  • 2 pounds ground chicken (93% lean recommended for juiciness)

Instructions
 

  • In a large bowl, combine the shredded Mozzarella, grated Parmesan, almond flour, eggs, Italian seasoning, garlic powder, onion powder, sea salt, black pepper, and 1 tablespoon of olive oil. Stir until all ingredients are well mixed.
  • Gently add the ground chicken to the bowl. Mix everything together until just combined, taking care not to over-mix, which can make your patties tough.
  • Divide the chicken mixture into 16 small patties, each about 3/8 inch thick. For easy handling, you can shape them on a parchment-lined cutting board and cut the paper around each patty to easily transfer them.
  • Heat 2 tablespoons of olive oil in a large nonstick skillet over medium heat for about 2 minutes, until the oil shimmers. Carefully place the chicken patties in a single layer. Cook for 3-4 minutes per side, until they are golden brown and cooked through.
  • Add more olive oil to the pan if needed, then repeat the cooking process with the remaining chicken mixture until all your patties are done.
  • Allow the cooked patties to rest for 5-10 minutes before serving to ensure they are extra juicy and flavorful.
