Instructions
In a large bowl, combine the shredded Mozzarella, grated Parmesan, almond flour, eggs, Italian seasoning, garlic powder, onion powder, sea salt, black pepper, and 1 tablespoon of olive oil. Stir until all ingredients are well mixed.
Gently add the ground chicken to the bowl. Mix everything together until just combined, taking care not to over-mix, which can make your patties tough.
Divide the chicken mixture into 16 small patties, each about 3/8 inch thick. For easy handling, you can shape them on a parchment-lined cutting board and cut the paper around each patty to easily transfer them.
Heat 2 tablespoons of olive oil in a large nonstick skillet over medium heat for about 2 minutes, until the oil shimmers. Carefully place the chicken patties in a single layer. Cook for 3-4 minutes per side, until they are golden brown and cooked through.
Add more olive oil to the pan if needed, then repeat the cooking process with the remaining chicken mixture until all your patties are done.
Allow the cooked patties to rest for 5-10 minutes before serving to ensure they are extra juicy and flavorful.
