Ingredients
  

  • 20 Medjool dates pitted
  • 3/4 cup semisweet or milk chocolate chips
  • 2/3 cup natural creamy peanut butter stirred
  • 1/2 cup coarsely chopped peanuts
  • 1/4 teaspoon kosher salt (optional)

Instructions
 

  • Prep Your Base: Line a baking sheet with parchment paper. Take your pitted Medjool dates, open them up, and lay them flat on the parchment, sticky side up. Place another sheet of parchment on top.
  • Roll 'Em Flat: Gently use a rolling pin or the bottom of a cup to press the dates into a thin, even layer, forming a rough rectangle. Make sure there are no gaps!
  • Spread the Peanut Butter: Carefully peel off the top parchment. Now, evenly spread the creamy peanut butter all over your flattened date layer. An offset spatula makes this super easy!
  • Melt the Chocolate: In a microwave-safe bowl, melt your chocolate chips. Heat them in 30-second bursts, stirring well after each, until smooth (this usually takes 60-90 seconds).
  • Drizzle and Top: Pour the melted chocolate over the peanut butter layer and spread it out evenly with a spoon or spatula. Before it sets, sprinkle the chopped peanuts on top and gently press them in. If you like, add a pinch of kosher salt for a sweet-and-salty kick!
  • Chill and Cut: Pop your creation into the fridge for about 1 hour, or the freezer for 30 minutes, until the chocolate is firm. Once set, use a knife to slice it into delicious, Snickers-like bars. Enjoy your guilt-free treat!
