Ingredients
  

  • 1 pound lean turkey sausage
  • 1 red bell pepper sliced
  • 1 medium onion sliced
  • 12 egg whites about 1.5 cups or 12 ounces
  • 4 ounces cream cheese softened
  • 1 teaspoon salt
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheese like cheddar, mozzarella, or a blend

Instructions
 

  • Get Ready: Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish with cooking spray to prevent sticking.
  • Layer the Goodness: Spread the turkey sausage, sliced bell pepper, and onion evenly across the bottom of your prepared baking dish.
  • First Bake: Pop the dish into the preheated oven for 20 minutes. Halfway through, give it a quick stir to ensure the sausage browns nicely and the veggies soften up.
  • Whip the Eggs: While the veggies and sausage are baking, combine the egg whites, softened cream cheese, salt, onion powder, garlic powder, and black pepper in a blender. Blend until the mixture is super smooth and creamy. (If you don't have a blender, an electric mixer works great to fully incorporate the cream cheese!)
  • Assemble & Top: Once the first bake is done, carefully pour the smooth egg mixture over the cooked sausage and veggies in the dish. Then, sprinkle your favorite shredded cheese generously over the top.
  • Final Bake: Return the casserole to the oven and bake for another 30 minutes, or until the egg mixture is fully set (it won't be jiggly in the center) and the edges are beautifully golden brown. Let it cool slightly before slicing and enjoying your healthy and delicious breakfast!
