Ingredients
  

  • 2 cups whole almonds roasted and unsalted
  • 2 (8-ounce) bars sugar-free dark chocolate like Lily's brand or your favorite keto-friendly option
  • 1 teaspoon powdered erythritol (or powdered monk fruit, optional, for extra sweetness)
  • Sea salt for sprinkling

Instructions
 

  • Line a large baking sheet with parchment paper or foil for easy cleanup. Set it aside.
  • Break the dark chocolate bars into smaller, manageable chunks and place them into a small, microwave-safe glass mixing bowl.
  • Gently melt the chocolate in the microwave. Heat it in 30-second increments, stirring thoroughly after each burst, until the chocolate is completely smooth and melted. Be careful not to overheat it!
  • Add the roasted almonds and the optional powdered sweetener to the melted chocolate. Stir everything together until every almond is beautifully coated in chocolate.
  • Using a small cookie scoop or a spoon, drop delightful little clusters of chocolate-covered almonds onto your prepared baking sheet. You can also lay individual almonds if you prefer single pieces.
  • For a quick set, pop the entire baking sheet into the refrigerator for about an hour, or until the chocolate is firm. Once firm, sprinkle lightly with sea salt for that perfect sweet and salty balance.
