Ingredients
  

Dry Ingredients

  • 1/2 cup yellow cornmeal
  • 1/3 cup whole wheat flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

Wet Ingredients

  • 1 large egg
  • 1/4 cup plain Greek yogurt
  • 2 tbsp melted coconut oil or light butter
  • 1/2 cup creamed corn

Add-ins

  • 1/2 cup fresh or frozen corn kernels
  • 1/3 cup shredded reduced-fat cheddar
  • 3 scallions, thinly sliced
  • 4 slices turkey bacon, cooked and crumbled

Instructions
 

  • Preheat your oven to 350°F. Lightly spray a 24-cup mini muffin tin with nonstick spray.
  • In a skillet over medium heat, cook the bacon until very crispy, about 8–10 minutes. Transfer to a paper towel and let cool, then crumble.
  • In a medium bowl, whisk together the cornmeal, flour, baking powder, and salt.
  • In a large bowl, whisk the egg, Greek yogurt, melted coconut oil, and creamed corn until smooth.
  • Add the dry mix to the wet mix and stir just until combined. Gently fold in the corn kernels, shredded cheddar, scallions, and half the crumbled bacon.
  • Spoon the batter evenly into the prepared mini muffin cups (about 1 heaping tablespoon each).
  • Bake for 18–22 minutes, until puffed and light golden around the edges. Let cool in the pan for 5 minutes.
  • Transfer to a platter. Top each bite with a tiny dollop of Greek yogurt, the remaining bacon crumbles, and a sprinkle of fresh scallion slices.
