Preheat your oven to 350°F. Lightly spray a 24-cup mini muffin tin with nonstick spray.
In a skillet over medium heat, cook the bacon until very crispy, about 8–10 minutes. Transfer to a paper towel and let cool, then crumble.
In a medium bowl, whisk together the cornmeal, flour, baking powder, and salt.
In a large bowl, whisk the egg, Greek yogurt, melted coconut oil, and creamed corn until smooth.
Add the dry mix to the wet mix and stir just until combined. Gently fold in the corn kernels, shredded cheddar, scallions, and half the crumbled bacon.
Spoon the batter evenly into the prepared mini muffin cups (about 1 heaping tablespoon each).
Bake for 18–22 minutes, until puffed and light golden around the edges. Let cool in the pan for 5 minutes.
Transfer to a platter. Top each bite with a tiny dollop of Greek yogurt, the remaining bacon crumbles, and a sprinkle of fresh scallion slices.
