Preheat your oven to 300°F (150°C).
In a spacious bowl, beat together the butter and cream cheese until smooth and creamy, about 1 minute.
Add the natural sweetener, baking powder, vanilla (or your chosen extract), and salt. Continue mixing until the mixture is wonderfully creamy.
Gently stir in the blanched almond flour until it's well combined and forms a dough. Chill the dough for a bit; this makes it much easier to handle!
Once chilled, place the dough onto a piece of greased parchment paper. Cover it with another piece of greased parchment paper and roll the dough out evenly to about 1 centimeter thick.
Remove the top parchment layer and use your favorite cookie cutters to create fun shapes.
Carefully place the cut-out cookies on a baking sheet, leaving about an inch between each. Bake for 12-15 minutes, or until the edges are lightly golden.
While the cookies cool, prepare the frosting! In a medium bowl, simply whisk all the frosting ingredients together. Start with 2 tablespoons of macadamia nut milk and add more gradually until you reach your desired spreadable consistency.
Stir in your preferred extract and a touch of natural food coloring if you wish.
Transfer the frosting to a Ziploc bag, snip off a small corner, and artfully pipe it onto your completely cooled cookies. Enjoy your delicious and healthy homemade treats!
