Ingredients
  

COOKIES

  • 1/4 cup butter
  • 2 ounces cream cheese
  • 1/2 cup powdered natural sweetener (and 1/2 tsp stevia glycerite)
  • 1/4 teaspoon baking powder
  • 1 teaspoon vanilla extract (or orange, lemon, or almond extract)
  • 1/2 teaspoon Redmond Real salt
  • 2 cups blanched almond flour

FROSTING

  • 2 cups powdered natural sweetener (and 1 tsp stevia glycerite)
  • 1/2 cup butter (or coconut oil)
  • 2 tablespoons unsweetened macadamia nut milk (adjust for desired thickness)
  • 1 teaspoon vanilla extract (or orange, lemon, almond, or strawberry extract)
  • Natural food coloring OPTIONAL

Instructions
 

  • Preheat your oven to 300°F (150°C).
  • In a spacious bowl, beat together the butter and cream cheese until smooth and creamy, about 1 minute.
  • Add the natural sweetener, baking powder, vanilla (or your chosen extract), and salt. Continue mixing until the mixture is wonderfully creamy.
  • Gently stir in the blanched almond flour until it's well combined and forms a dough. Chill the dough for a bit; this makes it much easier to handle!
  • Once chilled, place the dough onto a piece of greased parchment paper. Cover it with another piece of greased parchment paper and roll the dough out evenly to about 1 centimeter thick.
  • Remove the top parchment layer and use your favorite cookie cutters to create fun shapes.
  • Carefully place the cut-out cookies on a baking sheet, leaving about an inch between each. Bake for 12-15 minutes, or until the edges are lightly golden.
  • While the cookies cool, prepare the frosting! In a medium bowl, simply whisk all the frosting ingredients together. Start with 2 tablespoons of macadamia nut milk and add more gradually until you reach your desired spreadable consistency.
  • Stir in your preferred extract and a touch of natural food coloring if you wish.
  • Transfer the frosting to a Ziploc bag, snip off a small corner, and artfully pipe it onto your completely cooled cookies. Enjoy your delicious and healthy homemade treats!
