Ingredients
  

  • 1 pound lean ground beef or ground turkey
  • 1 pound ground pork sausage
  • 0.5 cup almond flour (or grated Parmesan cheese for a nut-free option)
  • 1 large egg
  • 1 tablespoon dried minced onion
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 16 ounces mozzarella cheese cut into 24 cubes (about 1-inch each)

Instructions
 

  • Get started by preheating your oven to 400°F (200°C). Lightly grease a baking sheet or casserole dish with a little olive oil or cooking spray.
  • In a large bowl, gently combine the ground beef/turkey, sausage, almond flour, egg, minced onion, Italian seasoning, garlic powder, salt, and pepper. Mix just until everything is combined, but avoid overmixing!
  • Use a large cookie scoop or your hands to form 24 meatballs. Take one cheese cube, press it into the center of each meatball, and carefully seal the meat around it, ensuring the cheese is completely covered. Place them evenly on your prepared baking pan.
  • Pop the meatballs into the preheated oven and bake for about 25-30 minutes, or until they're golden brown and cooked all the way through (internal temperature should reach 160°F/71°C).
  • Serve these cheesy delights hot with your favorite low-carb marinara sauce, a sprinkle of fresh parsley, or a dash of Parmesan cheese. Enjoy a satisfying and healthy meal!
