Ingredients
  

  • 1 large egg
  • 2 tablespoons almond flour
  • 2 tablespoons ground flaxseed
  • 2 tablespoons Swerve Brown Sweetener (or your preferred healthy sweetener)
  • 2 tablespoons canned pumpkin puree (100% pumpkin)
  • 1/4 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice

Instructions
 

  • Lightly spray a microwave-safe ramekin or mug with non-stick spray.
  • Crack the egg into the ramekin, add the pumpkin puree, and whisk them together until well combined.
  • In a separate small bowl, mix all the dry ingredients: almond flour, ground flaxseed, Swerve sweetener, baking powder, and pumpkin pie spice.
  • Add the dry mixture to the wet egg and pumpkin mixture, then stir until a smooth batter forms.
  • Microwave for 1 to 2 minutes. Cooking times vary, so check for doneness after 1 minute (mine took 1 minute and 40 seconds). Be careful not to overcook!
  • Allow your delicious mug cake to cool for a moment before indulging.
