- 2 tablespoons almond flour
- 2 tablespoons ground flaxseed
- 2 tablespoons Swerve Brown Sweetener (or your preferred healthy sweetener)
- 2 tablespoons canned pumpkin puree (100% pumpkin)
- 1/4 teaspoon baking powder
- 1 teaspoon pumpkin pie spice
Lightly spray a microwave-safe ramekin or mug with non-stick spray.
Crack the egg into the ramekin, add the pumpkin puree, and whisk them together until well combined.
In a separate small bowl, mix all the dry ingredients: almond flour, ground flaxseed, Swerve sweetener, baking powder, and pumpkin pie spice.
Add the dry mixture to the wet egg and pumpkin mixture, then stir until a smooth batter forms.
