Instructions
Start by gently melting your sugar-free white chocolate chips. Place them in a microwave-safe bowl and heat for 30 seconds. Stir well. If they're not completely smooth, microwave in 15-second intervals, stirring after each, until about 75% melted. Continuous stirring will melt the rest.
In a separate medium bowl, combine the almond flour, pumpkin puree, sweetener, vanilla extract, and pumpkin spice. Mix everything thoroughly until a smooth, pliable dough forms.
Using your hands, roll the dough into 12 even, bite-sized truffle balls.
Carefully dip each pumpkin ball into the melted white chocolate, ensuring it's fully coated. A fork works great for this!
Place the coated truffles on a parchment-lined plate or tray. Pop them into the fridge or freezer for just a few minutes (about 5-10) to allow the chocolate coating to firm up nicely.
For an optional healthy garnish, sprinkle with a pinch of cinnamon or drizzle a tiny bit more melted chocolate on top before serving. Enjoy these delightful, guilt-free treats!
