  • 1 pound lean ground beef
  • 1/4 cup diced onion
  • 2 cloves garlic minced
  • 1 green bell pepper diced
  • 1/2 red bell pepper diced
  • 1 small zucchini shredded
  • 1 tablespoon chili powder
  • 14 ounces diced tomatoes undrained
  • 1 cup beef stock
  • 1 cup tomato sauce
  • 2 tablespoons tomato paste

Instructions
 

  • In a large saucepan, gently brown your lean ground beef with the diced onion and minced garlic until the beef is no longer pink. For a healthier touch, carefully drain any excess fat.
  • Next, toss in the diced bell peppers, shredded zucchini, and fragrant chili powder. Sauté these vibrant veggies for about 3-4 minutes until the peppers start to soften slightly.
  • Now, pour in the diced tomatoes (juice and all!), rich beef stock, savory tomato sauce, and concentrated tomato paste. Give everything a good stir, then bring it to a gentle simmer. Let it cook uncovered for about 15 minutes, allowing the chili to thicken beautifully into a hearty meal.
  • Serve warm and feel free to add your favorite healthy garnishes like a dollop of sour cream, a sprinkle of cheese, or fresh cilantro for extra flavor!
