  • Prep Your Berries: Begin by making sure your beautiful strawberries are perfectly dry. It’s ideal to wash them the day before and let them air dry, or at least pat them very dry with paper towels for at least 30 minutes. Also, bring them to room temperature; this prevents condensation and helps the chocolate adhere smoothly. Line a baking sheet or large plate with parchment paper and set it aside.
  • Melt the Chocolate Gently: In a microwave-safe medium bowl (or a double boiler over simmering water on the stove), combine 3/4 cup of the dark chocolate chips with the coconut oil. Heat it gently, stirring every 15-30 seconds if microwaving at 50% power, until the chocolate is mostly melted and smooth. Avoid overheating!
  • Temper for Gloss & Snap: Immediately add the remaining 1/4 cup of dark chocolate chips to the warm melted chocolate. Stir vigorously until these chips are fully melted and the mixture becomes silky smooth. This simple "tempering" technique gives your chocolate a lovely glossy finish and a satisfying snap when it sets.
  • Dip and Delight: Hold each strawberry by its green stem (it's your perfect natural handle!) and dip it into the melted chocolate, rotating to coat all sides evenly.
