Spread about 1 tablespoon marshmallow crème onto half of the graham cracker halves. Place a popsicle stick halfway onto the crème (like a handle), then top with the remaining graham cracker half. Place these sandwiches on a parchment-lined baking sheet and pop them in the freezer.
In a medium microwave-safe bowl, heat the chocolate chips and coconut oil in 20-second bursts, stirring well after each, until completely melted and smooth (about 1 minute total). Dip each frozen graham cracker sandwich fully into the chocolate, using a butter knife or spatula to coat the sides. Stick one candy eye onto the right side of each "spellbook," about halfway down. Return to the baking sheet and refrigerate until the chocolate is firm, about 15 minutes.
Use the black cookie frosting to draw a circle around the eye, two small half-circles on the outer top corners of the "book," and a few "stitch" lines on the chocolate-coated graham crackers.
Refrigerate again until everything is fully set, at least 15 minutes.
