  • 1 box Lime Jello (3 oz)
  • 1 box Strawberry Jello (3 oz)
  • 6.5 cups Sweetened Desiccated Coconut for a less sweet option, use unsweetened coconut
  • 1.5 cups Plain Greek Yogurt full-fat for ultimate creaminess, or low-fat for a lighter touch

  • Prepare Your Yogurt Bases: Grab two medium-sized mixing bowls. Divide the 1 Β½ cups of plain Greek yogurt equally into each bowl, so you have ΒΎ cup in each. This keeps our festive colors separate!
  • Infuse with Color: Pour the entire box of lime Jello powder into one bowl with yogurt. Do the same with the strawberry Jello powder in the second bowl. Use a fork or small whisk to mix each bowl vigorously until all the Jello powder is completely dissolved and there are no dry streaks. The mixture will be quite thick and vibrant!
  • Chill to Perfection: Cover both bowls with plastic wrap and place them in the refrigerator for 20 to 30 minutes. This important step firms up the mixtures, making them easy to handle and roll into beautiful balls. Don't skip this for the best results!
  • Shape Your Treats: Once chilled and firm, use a small cookie scoop or a regular teaspoon to portion out the colorful mixture. Gently roll each portion between your palms to form smooth, uniform 1-inch balls. If the mixture gets a little sticky, lightly dampen your hands with water – it works wonders!
  • Add the Snowy Coating: Spread the desiccated coconut evenly on a large plate or in a shallow bowl. Take each beautifully colored ball and roll it around in the coconut until it’s fully coated, pressing gently to ensure the "snow" adheres. This transforms them into delightful, festive bites!
  • Final Firming: Arrange your finished red and green Jello balls on a baking sheet or plate lined with parchment paper. Loosely cover them and return them to the refrigerator for at least 1 hour. This final chill allows the Jello to fully set and the balls to firm up completely for a perfect, refreshing texture.
