Ingredients
  

  • 15 cloves fresh garlic peeled
  • 8 ounces fresh chili peppers (such as Fresno, or a mix of mild and hot peppers for your preferred heat level)
  • 1/3 cup distilled white vinegar (ensure it has at least 5% acidity)
  • 1 teaspoon salt (or to taste)
  • 2 teaspoons granulated sugar (or your preferred sugar substitute, adjust to taste)

Instructions
 

  • Prepare Safely: First, open your windows to ensure good ventilation; chili fumes can be quite potent! Don disposable kitchen gloves to protect your hands from the chili oils.
  • Ready the Garlic: Gently smash each garlic clove, then easily peel off the skin.
  • Prep the Chilies: Carefully snip off the stems from your chili peppers. You can leave the seeds in for maximum heat, or remove some or all for a milder kick. Roughly chop the peppers.
  • Blend Together: Place the peeled garlic and chopped chili peppers into your food processor or high-speed blender.
  • Add Seasoning: Pour in the distilled white vinegar, salt, and sugar.
  • Puree to Texture: Blend all the ingredients until you achieve a chunky, salsa-like consistency. If you prefer a smoother sauce, simply blend for a little longer.
  • Gentle Simmer: Transfer the blended mixture to a pan. Cook slowly over low heat for about 15 minutes, stirring occasionally. The sauce will gradually thicken and transform from a pale red to a vibrant "jungle red" as most of the liquid cooks off.
  • Cool & Store: Allow your homemade chili garlic sauce to cool completely. Then, transfer it to a clean, airtight glass jar or container. It will keep fresh in the refrigerator for up to 3 weeks, or you can freeze it in ice cube trays for up to 3 months. Thaw a cube quickly in the microwave when you need a burst of flavor!
