Iced Blueberry Matcha Latte

- 1 cup fresh or frozen blueberries
- 2 teaspoons water
- 1/2 tbsp sweetener (maple syrup or agave nectar)
- 3/4 cup ice cubes
- 3/4 cup plant-based milk
- 1-1½ tsp matcha powder
- 1/4 cup hot water
In a small saucepan, combine blueberries and water, cooking over medium-high heat for about 5 minutes. Stir frequently, mashing the blueberries until they become saucy. Remove from heat and mix in the sweetener.
You can either blend the mixture for a smooth syrup or strain it through a fine mesh colander for a smoother drink. Allow the blueberry sauce to cool for a few minutes.
In a small cup, whisk matcha powder with hot water until smooth.
In your serving glass, layer the blueberry syrup at the bottom, add ice cubes, pour in the plant-based milk, and top with the matcha mixture. Stir with a straw and enjoy immediately.
