Iced Blueberry Matcha Latte

Ingredients
  

  • 1 cup fresh or frozen blueberries
  • 2 teaspoons water
  • 1/2 tbsp sweetener (maple syrup or agave nectar)
  • 3/4 cup ice cubes
  • 3/4 cup plant-based milk
  • 1-1½ tsp matcha powder
  • 1/4 cup hot water

Instructions
 

  • In a small saucepan, combine blueberries and water, cooking over medium-high heat for about 5 minutes. Stir frequently, mashing the blueberries until they become saucy. Remove from heat and mix in the sweetener.
  • You can either blend the mixture for a smooth syrup or strain it through a fine mesh colander for a smoother drink. Allow the blueberry sauce to cool for a few minutes.
  • In a small cup, whisk matcha powder with hot water until smooth.
  • In your serving glass, layer the blueberry syrup at the bottom, add ice cubes, pour in the plant-based milk, and top with the matcha mixture. Stir with a straw and enjoy immediately.
