These individual egg bakes are a quick, low-carb, and delicious option perfect for breakfast or meal prep. Customize with your favorite mix-ins for a personalized treat!

Ingredients
  

  • 0.25 cup shredded cheese
  • 2 slices bacon cooked until crispy and diced (or desired protein)
  • 2 large eggs
  • 0.25 cup milk
  • salt and pepper to taste
  • 1 tbsp diced bell pepper

Instructions
 

  • Start by preheating your oven to 350°F (175°C) or your air fryer to 300°F (150°C). Lightly coat the inside of an 8-ounce ramekin with cooking spray.
  • Layer your chosen mix-ins at the bottom of the ramekin. We recommend starting with the shredded cheese and crispy bacon. Feel free to get creative with other veggies or proteins!
  • In a separate small bowl, whisk together the eggs and milk until well combined. Season this mixture with a pinch of salt and pepper.
  • Carefully pour the egg mixture into the ramekin, over the cheese and bacon. Top it off with the diced bell pepper for a burst of freshness.
  • For Air Fryer:

    Place the ramekin in the air fryer basket. Cook for 5 minutes. If you notice the top browning too quickly, loosely cover it with a small piece of foil. Continue cooking for another 10 minutes, or until an instant-read thermometer inserted into the center reaches 165°F (74°C).
  • For Oven:

    Place the ramekin on a small baking sheet. Bake in the preheated oven for about 25 minutes, or until the center reaches 165°F (74°C).
  • For Microwave:

    Place the ramekin in the center of the microwave. Cook on high for 1 to 2 minutes, checking for doneness until the internal temperature reads 165°F (74°C).

Notes

Feel free to customize your egg bake with different cheeses, proteins, and vegetables. Just ensure they are cooked through!
