Ingredients
  

  • 5 large Eggs
  • 1/2 cup shredded Gruyere cheese
  • 1/3 cup Heavy cream (or any type of milk or half & half)
  • 2 tablespoons Water (skip if using milk instead of heavy cream)
  • 1/8 teaspoon Sea salt
  • 1/8 teaspoon Black pepper
  • 7 slices cooked Bacon

Instructions
 

  • 1. Prepare Your Molds: Lightly grease a silicone egg bite mold. Take your cooked bacon slices, cut each in half, and gently tuck two pieces into the bottom of each mold cup, allowing them to curve up the sides.
  • 2. Blend the Egg Base: In a blender, combine the eggs, shredded Gruyere cheese, heavy cream (or your chosen milk/half & half), 2 tablespoons of water (skip this small amount of water if you're using milk instead of heavy cream), sea salt, and black pepper. Blend on high speed until the mixture is completely smooth and a little frothy. This step is key for that creamy, fluffy texture!
  • 3. Fill and Cover: Carefully pour the smooth egg mixture evenly into each prepared mold cup. Tightly cover the mold tray with aluminum foil.
  • 4. Pressure Cook: Pour 1 cup of water into the bottom of your Instant Pot and place the trivet with handles inside. Gently set the covered egg bite mold onto the trivet. Secure the Instant Pot lid, ensure the steam valve is set to "Seal," then select the "Manual" setting and cook at High pressure for 9 minutes.
  • 5. Release and Enjoy: Once the cooking cycle finishes, allow for a 5-minute natural pressure release. After 5 minutes, carefully switch the valve to "Quick Release" for any remaining pressure. Using oven mitts, carefully lift the trivet and mold out of the Instant Pot. Remove the foil and let your delicious egg bites cool in the mold for about 5 minutes – they'll firm up and shrink slightly, making them super easy to pop out. Flip the mold over a plate to release.
