Meatballs

  • 1.5 pounds lean ground turkey
  • 1/2 cup almond flour (or Parmesan cheese for an alternative binder)
  • 1 large egg
  • 1 tablespoon dried minced onion
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt (reduce to 1/2 teaspoon if using Parmesan cheese)
  • 1/2 teaspoon black pepper

Sauce

  • 2 cups sugar-free marinara sauce

Instructions
 

  • Carefully pour the sugar-free marinara sauce into the bottom of your Instant Pot insert.
  • In a large mixing bowl, gently combine the ground turkey, almond flour (or Parmesan), egg, dried minced onion, Italian seasoning, garlic powder, salt, and black pepper. Mix just until everything is incorporated without overworking the meat.
  • Using a large cookie scoop or your hands, form the meat mixture into 12 evenly sized meatballs. Carefully place these meatballs into the Instant Pot, nesting them on top of the marinara sauce.
  • Secure the Instant Pot lid, ensuring the sealing vent is closed. Cook on high pressure for 7 minutes.
  • Once cooking is complete, allow the pressure to naturally release for 5 minutes. After 5 minutes, perform a quick release of any remaining pressure by carefully turning the vent valve to the venting position (use a kitchen towel or wooden spoon to protect your hand from steam).
  • Serve these easy, healthy, and flavorful turkey meatballs with your favorite low-carb pasta, zucchini noodles, or a fresh green salad.
