Ingredients
  

  • 1 cup cooked brown rice or white rice
  • 1/2 cup grated carrot
  • 1 large egg lightly beaten
  • 1/4 cup whole wheat breadcrumbs or panko
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder optional
  • 6-8 black olives sliced into small pieces for faces
  • 12 green bean tips for stems

Instructions
 

  • In a bowl, mix the cooked rice, grated carrot, beaten egg, breadcrumbs, salt, pepper, and garlic powder until well combined.
  • Shape the mixture into 12 small balls (about 1 inch wide).
  • Place them on a baking sheet lined with parchment paper.
  • Bake at 375°F (190°C) for 18–20 minutes, until golden and firm.
  • Let cool slightly, then gently press olive pieces onto each ball to make eyes and a spooky mouth. Top each with a green bean tip as a stem. Serve warm or at room temperature.
