Ingredients
  

For the Chicken Marinade & Cooking

  • 1 lb boneless, skinless chicken thighs or breasts
  • 2 tbsp olive oil
  • 1 lemon juiced
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • salt & pepper to taste

For the Bowls Assembly

  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup Kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1/2 cup tzatziki sauce
  • fresh parsley for garnish

Instructions
 

  • Marinate the chicken by mixing olive oil, lemon juice, garlic, oregano, salt, and pepper; let sit for 30 minutes.
  • Cook the chicken on a grill or skillet for 5–6 minutes per side until fully cooked; then slice into strips.
  • Assemble the bowls by placing rice or quinoa as the base, then topping with veggies, olives, feta, and chicken slices.
  • Finish with a dollop of tzatziki and sprinkle fresh parsley.
  • Serve warm or chilled for a tasty, healthy meal!
