For the Chicken Marinade & Cooking
- 1 lb boneless, skinless chicken thighs or breasts
- 2 tbsp olive oil
- 1 lemon juiced
- 2 cloves garlic minced
- 1 tsp dried oregano
- salt & pepper to taste
For the Bowls Assembly
- 2 cups cooked rice or quinoa
- 1 cup cherry tomatoes halved
- 1 cucumber diced
- 1/4 cup red onion thinly sliced
- 1/4 cup Kalamata olives
- 1/4 cup crumbled feta cheese
- 1/2 cup tzatziki sauce
- fresh parsley for garnish
Marinate the chicken by mixing olive oil, lemon juice, garlic, oregano, salt, and pepper; let sit for 30 minutes.
Cook the chicken on a grill or skillet for 5–6 minutes per side until fully cooked; then slice into strips.
Assemble the bowls by placing rice or quinoa as the base, then topping with veggies, olives, feta, and chicken slices.
Finish with a dollop of tzatziki and sprinkle fresh parsley.
Serve warm or chilled for a tasty, healthy meal!
