- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1/4 tsp salt
- 3/4 cup unsalted butter softened
- 1/2 cup sugar-free sweetener
- 1 tsp vanilla extract
Filling
- 1/4 cup sugar-free chocolate chips
- 1 tsp coconut oil
Mix the dry ingredients: In a bowl, whisk together almond flour, coconut flour, and salt.
Cream the butter and sweetener: In a separate bowl, beat the softened butter, sweetener, and vanilla until light and fluffy.
Make the dough: Slowly mix the dry ingredients into the butter mixture until a smooth dough forms.
Roll and chill: Place the dough between two sheets of parchment paper and roll to 1/4-inch thick. Refrigerate for 20–30 minutes.
Cut and bake: Use a pumpkin cutter to make shapes. Cut Jack-O'-Lantern faces into half of the cookies. Place all shapes on a baking tray and refrigerate again for 15–20 minutes. Bake at 350°F for 6–7 minutes until edges are golden. Cool completely on the tray.
Assemble: Melt the chocolate chips with coconut oil in 30-second microwave bursts. Spread melted chocolate on the solid pumpkin cookies, then press a face cookie on top. Let set.
