Ingredients
  

  • ½ lb medium to large raw shrimp uncooked, peeled, deveined
  • 2 eggs beaten
  • ½ cup unsweetened shredded coconut
  • 1 ½ tbsp coconut flour
  • 1 tsp baking powder
  • ¼ tsp garlic powder
  • ¼ tsp paprika
  • ¼ tsp onion powder
  • tsp salt
  • tsp black pepper

Instructions
 

  • In a bowl, combine shredded coconut, coconut flour, baking powder, garlic powder, paprika, onion powder, salt, and pepper. Set aside.
  • In another bowl, beat the eggs.
  • Lightly oil the air fryer basket.
  • Dip each shrimp in the beaten eggs, ensuring full coverage, then coat with the coconut mixture.
  • Arrange the shrimp in a single layer in the air fryer basket, leaving space between them. Spray the tops with oil.
  • Cook at 350℉ (180℃) for about 10 minutes, flipping halfway through until golden and crispy.
  • Carefully remove the first batch and repeat with the remaining shrimp. Serve immediately and enjoy!
