Instructions
In a bowl, combine shredded coconut, coconut flour, baking powder, garlic powder, paprika, onion powder, salt, and pepper. Set aside.
In another bowl, beat the eggs.
Lightly oil the air fryer basket.
Dip each shrimp in the beaten eggs, ensuring full coverage, then coat with the coconut mixture.
Arrange the shrimp in a single layer in the air fryer basket, leaving space between them. Spray the tops with oil.
Cook at 350℉ (180℃) for about 10 minutes, flipping halfway through until golden and crispy.
Carefully remove the first batch and repeat with the remaining shrimp. Serve immediately and enjoy!
