Ingredients
  

Dry Ingredients

  • 3/4 cup pecans
  • 1/2 cup flaked coconut
  • 1/2 cup sliced almonds
  • 1/2 cup shelled pumpkin seeds (pepitas)
  • 1/2 tsp salt

Wet Ingredients

  • 3 tbsp granular sweetener erythritol recommended
  • 3 tbsp melted butter or oil
  • 1 tsp maple extract or vanilla extract

Instructions
 

  • Gently combine the pecans, coconut, almonds, pumpkin seeds, and salt in a food processor. Give them a few quick pulses until they resemble coarse crumbs, but still have some lovely larger pieces for texture.
  • Transfer this mixture into a mixing bowl. Stir in your sweetener until it's nicely distributed, then pour in the melted butter (or oil) and your chosen extract. Mix everything together until it just begins to clump.
  • Prepare your air fryer: remove the rack and line the bottom with a parchment paper liner. Spoon your granola mixture into the basket and press it down firmly and evenly across the bottom.
  • Cook your granola in the air fryer at 300°F for 12 to 15 minutes. Stir a few times during cooking and press back down to ensure every piece gets crispy.
  • Let your granola cool completely in the air fryer basket for maximum crunch, then transfer to an airtight container.
