Ingredients
  

  • 1 cup Mascarpone cheese
  • 1 cup Unsweetened Coconut Cream solidified (chill can overnight for best results)
  • 1/3 cup Unsweetened Cocoa Powder
  • 1/3 cup Powdered Allulose or Swerve Confectioners
  • 1/4 cup Heavy Cream
  • 2 tablespoons Toasted Slivered Almonds for garnish
  • 2 tablespoons Unsweetened Shredded Coconut for garnish
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Coconut Extract
  • Chopped Sugar-Free Chocolate (Optional) for garnish

Instructions
 

  • In a large mixing bowl, combine the creamy mascarpone cheese and the firm unsweetened coconut cream. Use a hand mixer to whip them together until the mixture is beautifully smooth.
  • Now, add in the rich unsweetened cocoa powder, your chosen powdered sweetener (Allulose or Swerve), a splash of heavy cream, and both the vanilla and coconut extracts.
  • Continue mixing until everything is perfectly combined into a wonderfully smooth and creamy mousse.
  • Place your delicious mousse in the refrigerator to chill and firm up slightly. Before serving, garnish with the delightful crunch of toasted slivered almonds, a sprinkle of unsweetened shredded coconut, and optionally, some chopped sugar-free chocolate. Enjoy this easy, healthy treat!

Notes

Unsweetened Coconut Cream should be solidified. Chill the can overnight for best results.
