Ingredients
  

  • 1/2 cup heavy cream
  • 1/3 cup powdered sweetener such as allulose or erythritol
  • 1/4 tsp almond or coconut extract
  • 1 1/2 cups unsweetened shredded coconut
  • 12 whole almonds
  • 3 ounces sugar-free chocolate dark or milk, chopped
  • 1/2 ounce cocoa butter or 1 tablespoon coconut oil, for thinning

Instructions
 

  • Prepare Your Station: First, line a baking sheet with parchment or waxed paper.
  • Heat the Cream: In a medium saucepan, gently warm the heavy cream over medium heat until it just begins to simmer, about 2 minutes. Remove it from the heat.
  • Sweeten and Flavor: Stir in your powdered sweetener and almond (or coconut) extract until everything is well combined.
  • Add the Coconut: Fold in the unsweetened shredded coconut. Let this delicious mixture cool for 5 to 10 minutes; it will thicken up nicely.
  • Form the Eggs: Scoop out 12 equal portions of the coconut mixture onto your prepared baking sheet. Using a spoon, gently shape each portion into an oval or egg shape. Carefully press one whole almond onto the top of each 'egg'.
  • Chill Time: Place the baking sheet in the freezer for about 2 hours, or until the coconut eggs are firm.
  • Melt the Chocolate: Create a double boiler by placing a heatproof bowl over a pan of barely simmering water. Add the chopped sugar-free chocolate and cocoa butter (or coconut oil) to the bowl. Stir occasionally until the chocolate is completely melted and smooth.
  • Dip and Set: Using a fork, carefully dip each frozen coconut 'egg' into the melted chocolate. Gently tap the fork against the side of the bowl to remove any excess chocolate. Return the coated eggs to the parchment-lined sheet. Allow them to set at room temperature for 10-20 minutes, or until the chocolate is firm and glossy. Enjoy your healthy, homemade treat!
