Soft, buttery keto almond cookies dipped in white or pink chocolate. A perfect low-carb Valentine’s Day treat.

Ingredients
  

Cookie Dough

  • 1 1/2 cups almond flour
  • 4 tbsp unsalted butter softened
  • 2 tbsp cream cheese softened
  • 1 tsp vanilla extract
  • 1/3 cup powdered erythritol or monk fruit sweetener low carb sugar substitute
  • 1/2 tsp baking powder

Decoration

  • 1 cup keto white chocolate chips
  • red food coloring optional
  • sugar-free sprinkles optional

Instructions
 

  • Mix almond flour, butter, cream cheese, vanilla, sweetener, and baking powder until a smooth dough forms.
  • Cover and refrigerate the dough for 30 minutes.
  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Roll dough between parchment paper and cut into shapes.
  • Bake for 12 minutes until edges are lightly golden.
  • Cool completely before decorating.
  • Melt white chocolate gently, tint if desired, dip cookies, and decorate.
  • Chill until chocolate sets, then serve.
