Ingredients
  

  • 8 pieces Keto Street Taco Sized Tortillas
  • 1 Avocado
  • 1/3 cup Chopped Strawberries
  • 2 cups Shredded Chicken
  • 1/3 cup Mayonnaise
  • 1/4 cup Diced Celery
  • 1/2 cup Chopped Strawberries
  • 2 tbsp Olive Oil
  • 2 tsp Dijon Mustard
  • 2 tsp Sugar-Free Honey
  • 2 tbsp Balsamic Vinegar

Instructions
 

  • In a mixing bowl, mash the avocado until smooth.
  • Add shredded chicken, diced celery, mayonnaise, and season with salt and pepper; mix well.
  • Gently fold in the chopped strawberries.
  • Spoon the chicken salad into the tortillas and roll them up tightly.
  • Heat a skillet over medium heat and spray with cooking spray.
  • Place the rolled tortillas seam side down in the pan, cooking until golden and crispy. Flip to toast the other side lightly, then remove from heat.
  • Blend all vinaigrette ingredients in a food processor until smooth.
  • Serve the rollups with the vinaigrette for dipping or drizzling.
