  • 1.5 cups Almond Flour
  • 4 strips bacon cooked until crispy and crumbled
  • 2 large eggs lightly beaten
  • 0.5 cup sour cream
  • 1 tablespoon bacon grease melted
  • 3 tablespoons grass-fed butter melted
  • 0.33 cup shredded cheddar cheese
  • 0.33 cup shredded smoky bacon cheddar cheese (or simply ⅔ cup shredded cheddar cheese if unavailable)
  • 0.5 teaspoon Swerve Confectioners or powdered erythritol
  • 1 teaspoon garlic salt
  • 1 teaspoon onion powder
  • 1 tablespoon dried parsley
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda

Instructions
 

  • Preheat your oven to a cozy 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  • In a medium bowl, whisk together the almond flour, baking powder, baking soda, Swerve (or erythritol), onion powder, and garlic salt until well combined. This ensures even flavor!
  • In a separate, larger bowl, gently mix the beaten eggs, crumbled bacon, sour cream, dried parsley, melted bacon grease, and melted grass-fed butter.
  • Stir both types of shredded cheddar cheese into the wet ingredients.
  • Gradually add the dry ingredient mix to the wet ingredients, stirring just until everything is combined. Be careful not to overmix; a few lumps are perfectly fine for fluffy biscuits!
  • Spoon generous dollops of the biscuit dough onto your prepared baking sheet. Bake for 12-15 minutes, or until they're beautifully golden brown and cooked through. Enjoy these warm, savory treats!
