Ingredients
  

  • 1 lb lean Ground Beef
  • 1/2 cup Almond Flour
  • 1/4 cup Unsweetened Almond Milk
  • 1 large Egg
  • 2 tsp Mustard
  • 2 tbsp Sugar-Free Ketchup
  • 1/4 cup finely chopped Dill Pickles
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • Salt and Black Pepper to taste
  • 3/4 cup Sugar-Free BBQ Sauce divided
  • 1 1/2 cups Shredded Colby Jack Cheese
  • 5 slices cooked Bacon crumbled

Instructions
 

  • Stir the almond flour and unsweetened almond milk together in a small bowl, letting it rest for a few minutes to thicken.
  • In a large mixing bowl, gently combine the ground beef, egg, mustard, sugar-free ketchup, chopped pickles, onion powder, garlic powder, the almond milk mixture, and a pinch of salt and pepper.
  • Shape the beef mixture into bite-sized, even meatballs, then lightly sear them in a skillet over medium heat until cooked to your preference.
  • Set your oven to 350°F and place the cooked meatballs in a single layer inside a 9x9-inch baking pan.
  • Coat the meatballs by brushing them with 1/2 cup of your sugar-free BBQ sauce.
  • Scatter the shredded Colby Jack cheese and crispy bacon crumbles evenly over the top, then bake until the cheese is wonderfully melted and gooey.
  • Give them a final brush with the remaining BBQ sauce just before serving and enjoy!
